what can i possibly say about this that you havent already imagined. just two simple words...BACON..and...CANDY. might make little sense to the unenlightened few, but once you've crossed the line and seen the light, this concept makes all the sense in the world. as a matter of fact all seems right in my world once sweet and savory are put into play. this is a quick simple way to get that fix. come on...you know it's true..bacon makes everything better.

BACON CANDY
lots of versions out there, but this is how i roll...
i like to use THICK sliced applewood smoked bacon
cover a sheet pan with parchment or foil for easier clean up
put slices on a rack that fits pan
sprinkle brown sugar on each slice, a few lumps are fine, they will melt
sprinkle with a little cayenne pepper or cinnamon if you can't take the heat.
put in the oven at 380 degrees for about 15-20.. minutes or until it's good and crispy. it depends on your choice of thickness.
let cool completely before attempting to devour. melting sugars and sizzling bacon can be a tad detrimental to the palette. ENJOY !
this is best the day of, but i have saved some and re-crisped in the toaster oven.

No fair not posting the recipe! My attempts at bacon candy were somewhat less impressive but, as you say, everything is better with bacon. Nomnomnomnomnom! :) I'm not really a big fan of bacon-candy goodies (like chocolate with bacon for instance, or indeed caramel with bacon bits), but this sounds just right - bacon as it should be, with a hint of sweet and spice, lush!!

Had Bacon Candy at the car show in ANoka, MN about a month ago and now it is stuck in my head. They did it a bit different. They smoked the bacon after dipping it in a sauce of brown sugar, hint of a balsamic vinegar and cayenne pepper. It was then dipped in motre brown sugar and cayenne pepper and smoked again. I've made the candied bacon from Kelsey's Essentials on Cooking Channel and it's the best thing I've ever eaten (despite not liking bacon on its own), but I can't get it done in 20 minutes. It takes at least an hour for it to cook fully in the oven for me. I know my bacon's not THAT thick, any idea why it takes so long at 350 in a gas oven?
hi Erin...i just saw the kelsey show on candied bacon. i do it differently. as i remember...i use thick slice bacon. i know i don't use a rack, i lay out heavy tinfoil(easy clean-up) my oven is at 380-390 on convection. i sprinkle with a little brown sugar on one side. cook for a little while...remove from oven and drain off some fat. flip bacon and sprinkle more sugar AND chili powder, cinnamon. cook again. drain fat again if necessary and flip again. sprinkle with more brown sugar, chili powder and cinnamon. cook until nice and crispy. she makes it look so easy but it takes a little attention to detail otherwise it will just be a sugary piece of floppy bacon. mine holds up very well. just take your time. anymore questions please let me know...jules
PS...the whole process might take about 45 minutes with 3 or 4 flips
