I had a dish similar to this ...This looks so good!<br /><br />I had a dish similar to this one, at a restaurant called Ivy in Rotterdam, The Netherlands. However, they made a caramel of the butternut squash, on top a bit of crispy pecorino and on top of that a really nice, old parma. one of the most delicious dishes i've ever tasted! No clue on how to make the buttersquash toffee/caramel myself though!
